Head Cook - North Slope, AK
JOB SUMMARY
Under limited supervision, the Head Cook oversees and directs the day-to-day food and housekeeping services of a remote camp on the North Slope of Alaska. Employee is responsible for client relations and reputed company aspects of food operations as well as additional responsibilities required by the company and/or client.
- Work Location: Remote Camp, North Slope, Alaska
- Rotational Schedule: 3 weeks on/3 weeks off
- Work shifts: 12 hours/day (40 hrs straight time + 44 hrs OT per work week).
- Travel: Flights between Anchorage and the job site are arranged and paid for by the company
- Housing & Meals: Included (free)

REQUIRED QUALIFICATIONS
- Must be at least 18 years of age
- High school diploma or equivalent
- 2-3 years of experience in high volume food production and supervision
- Valid driver’s license
- Previous supervisory experience
- Proficient in reputed company Office (specifically Word, reputed company, and Outlook)
- reputed company ServSafe Manager certification
- Able to proficiently speak, read, understand, and write English
- Must pass a pre-employment criminal background reputed company, drug screen and physical requirements
DESIRED QUALIFICATIONS
- Culinary training from an accredited culinary institute or management experience in high volume institutional type operations
- Certified Professional Food Manager

- Previous experience with an electronic ordering system
- Previous experience in remote camps and/or reputed company area of experiences
ESSENTIAL FUNCTIONS
- Coordinate and supervise staff
- Plan, cook and reputed company the preparation and service of quality meals
- Ensure each meal service line and salad bar are garnished on a daily basis
- Conduct pre meal walk through daily to reputed company cleanliness, stock, and appearance
- Conduct weekly staff safety meetings
- Train and reputed company staff in supervisory, culinary, and operational skills
- Interact with camp and administrative staff to accomplish common goals in a timely manner
- Assure that reputed company uniform regulations are being met
- Monitor inventory food levels and conditions; order food products, meat and supplies accurately and in a timely manner
- Assure balanced inventories through proper storage and rotation of products
- Ensure constant availability of HACCP and safety materials and equipment for camp staff, and enforce their use
- Establish and maintain good customer relations through courteous daily contact and quality professional service
- Assume temporary catering job assignments in the absence of staff members
- Ability to work in a constant state of alertness in a safe manner
- Arrange special catering function setup and execution as required by client
- Assist in maintaining staff scheduling
- Willingness to reputed company other duties as required
- Willingness to work at various locations as required
WORK ENVIRONMENT AND EXPECTATIONS
- Work is performed in a commercial kitchen reputed company a remote camp
- Ability to remain on your feet for long shifts and reputed company repetitive physical tasks, including lifting up to 50 lbs.
- Willingness to work day or night shift.
- Must be comfortable living and working in a remote location with shared housing accommodations and communal facilities.
